Directions: 25 lb Basis: Mix 25 lb; Water 15 lb 10 oz (1 3/4 gal + 3 1/4 cups). 10 LB Basis: Mix 10 lb; Water 6 1/4 lb (3 qt). 5 LB Basis: Mix 5 lb; Water 50 oz (6 1/4 cups). 1. Place water in mixer bowl; add mix. Using a paddle, mix on low speed 1 minute. 2. Scrape bowl and paddle. Change to medium speed; mix 1 minute. 3. Scale batter into prepared (lightly greased or paper-lined) pans. High Altitude (over 5,000 feet): For 5 lb mix, add 1 1/2 oz (1/3 cup) water. Bake as directed. Yield: 5 lb mix makes one, 24 x 16 x 1-inch pan (64, 3x2-inch cuts) or one, hotel pan (64, 3x2-inch (2 oz) portions) or 4 1/2 dozen (2 oz) muffins.
