Directions: 25 lb Basis: Mix - 25 lb; Cool Water - 30 b (3 gal 3 qt). 10 lb Basis: Mix - 10 lb; Cool Water - 12 lb (1 gal 2 qt). 5 lb Basis: Mix - 5 lb; Cool Water - 6 lb (3 qt). 1. Place water in mixer bowl; add mix. Using a whip, mix on low speed 30 seconds. 2. Scrape bowl. Continue to mix on low speed 30 seconds. 3. Pour batter onto lightly greased, preheated 365 degrees F-375 degrees F griddle. Cook pancakes 1-1/4 - 1-1/2 minutes per side. Turn only once. Tips: Do not overmix batter. Add more water for thinner pancakes. Additional water can be used if batter becomes thick upon standing.
